Didalam proses pengadukan, steam injection akan ditembakkan ke dalam bejana dengan suhu berkisar 90 hingga 95 derajat celcius, sehingga daging buah sawit menjadi lunak.
Fungsi utama mesin digester ini yaitu melumatkan buah sawit (brondolan) sehingga daging buah sawit ini dapat terpisah dari nut/biji.
