Stasiun perebusan pada pabrik kelapa sawit akan memproses daging buah kelapa sawit menjadi lunak, sehingga partikel cair bisa terpisah dari partikel padat saat proses pengepresan. Enzim pectin yang ada di buah pun dimatikan, ini juga menjadi faktor yang mempermudah buah lepas dari tangkainya. Secara umum, proses kerja yang terjadi di stasiun perebusan dimulai dari mengeluarkan udara di dalam bejana, melunakkan daging buah, dan memberikan jarak kernel dengan kulit dan terakhir, membuang steam.

 

Kenapa udara harus dikeluarkan? Karena sifatnya yang mampu menjadi penyalur panas yang buruk, sehingga kalor dari steam lebih mudah sampai ke daging buah. Jika proses pemisahan ini tidak berhasil, maka proses pembuangan udara harus dikerjakan dua kali. Mesin perebusan dibagi menjadi beberapa jenis didasarkan dua kriteria, yaitu berdasarkan posisinya dibagi menjadi horizontal, vertical, dan miring. Sedangkan jika dibedakan berdasar bejananya, dibagi menjadi tabung dan bola. Berbeda bentuk akan membedakan posisi pintu rebusan dalam mesin sterilizer. Ukuran pintu rebusan sawit pun bervariasi didasarkan pada bentuknya. Karet pintu rebusan menjadi salah satu hal yang harus diperhatikan dalam penggunaan sterilizer di stasiun perebusan.

Melihat kepada dua jenis mesin perebusan yaitu horizontal dan vertical, masing-masing mempunyai kelebihan dan kekurangan masing-masing. Produsen tentu bisa memilih mesin mana yang akan digunakan sesuai kebutuhan dalam pabrik.

1. Vertical sterilizer

Kelebihan: mampu mengurangi biaya perawatan pabrik, alasannya tidak membutuhkan lori, rel, kapstan, hoisting crane serta beragam aksesorisnya. Ini akan menghemat energi utama di stasiun perebusan.

Kekurangan: risiko kehilangan minyak cukup tinggi. Hal ini diakibatkan beberapa faktor pendukung, yaitu ada cukup banyak tandon buah sawit yang menumpuk, sehingga hasil perebusan lebih lembek. Vertical sterilizer hanya bisa dibersihkan seminggu sekali, sehingga lubang saringan di bagian bawah mudah tersumbat, akibatnya banyak kondensat yang tertinggal. Selain itu vertical sterilizer yang dibantu air akan bersenggolan dengan buah, dan hampir semua tandon buah sawit tidak sepenuhnya bersih dari kotoran tanah.

2. Horizontal sterilizer

Kelebihan: tidak menggunakan scraper conveyor, sehingga tidak butuh rantai berharga mahal. Kondensat pun lebih sedikit, buah-buahnya pun bisa disimpan di lori agar tidak menumpuk di loading ramp.

Kekurangan: rail track yang ada di rebusan bisa mudah memuai, adanya transfer carriage untuk transisi jalur lori, adanya transfer carriage untuk transisi jalur lori, serta dibutuhkan crane untuk menuang buah, serta waktu perebusan yang lebih lama. Ini diakibatkan waktu pembuangan udara yang juga berpengaruh di pembuangan.

Beberapa hal yang memegang pengaruh dalam stasiun perebusan, yaitu kualitas steam, pengaturan steam, serta waktu perebusan. Kualitas steam harus stabil, dalam arti tidak boleh naik turun, apalagi sampai ada dalam kondisi drop. Serta, kualitas air juga harus baik karena akan berpengaruh saat proses perebusan berlangsung.
